Not being able to craft godly gear is a really good motivation to actually dig around looking for loot. I would avoid crafting (or maybe only do 1) to give you a good reason to really go out and dungeon crawl. Speaking of, the extra gold and loot from perking Lockpicking can really help this kind of build. You could also skip magic entirely and put the perks in Speech or something else that would fit more of an RP desire. You could add Illusion too for some good support spells, but that may be a little heavy on the casting side if you're trying to avoid it. I'd probably use Archery (a crossbow for alpha strikes, not for shooting guys full of bolts) and Sneak (for mobility/setting up attacks, not for assassinations) a bit but not perk them much. The spell casting would mostly be support only, healing out of combat and Candlelight, Ash Runes ("setting traps"), Water Breathing, etc.

If you need a single recommendation, go with the CyberPowerPC Gamer Master. These PCs easily meet those requirements and will allow you to even mod the game a little with new companions and perhaps a texture pack.
